RECIPE: Homemade (Anti-Tortilla) Tortilla Chicken Soup

You asked for it! Here’s the recipe for my Homemade Chicken Tortilla Soup βœ¨πŸ“πŸ₯‘

(Inspired by Jennifer Garner’s Pretend Cooking Show)

Every time I make this several friends reach out wanting the recipe.

Since I made it up in the aisles of Trader Joes, it didn’t really exist.

Ingredients:

-1 medium white onion chopped
-1 jalapeΓ±o
-3 cloves of fresh garlic
-2 organic chicken breasts
-1 container of Trader Joe’s β€œOrganic Free Range Chicken Broth” (32 fl oz, comes in a box!)
-1 can of Trader Joe’s β€œDiced & Fire Roasted Tomatoes with Organic Green Chiles”

Toppings:

-Finely chopped cilantro
-Lime juice
-Munster cheese (if you’re feeling like a baddie!)
-Ripe avocado

 

Recipe:

1.) Chop onion and sautΓ© in a pan with a tiny spritz of avocado oil with salt (I like it toasty - aka until it’s dark brown on some parts.)
2.) Throw in a finely chopped jalapeΓ±o and 3 cloves of very very finely chopped garlic about half way through.
3.) Add in the can of fire roasted tomatoes & green chile and keep on simmer. 
4.) Trim off any remaining fat on the chicken breasts and cut into a few pieces. Boil in the broth until cooked through. Cool for a hot minute before shredding by hand and putting it back in the broth. 
5.) Combine the pan of onions, jalapeΓ±o, garlic, and tomatoes into the broth and shredded chicken. Stir well. 
6.) Serve in a bowl and top with fresh cilantro, a wedge of fresh squeezed lime juice, shredded munster cheese (unless you’re dieting lol), and avocado chunks. 
7.) Enjoy (and have a healthy lunch prepped for days to come!)
